T. J. Neil, Sr. and his son T. J. Neil, Jr., make large concrete sculptures in Florida. They're fearless. The scale is huge, so some are made on site. They use an armature of rebar rods and galvanized wire, building up a mixture of sand, stone and Portland cement.

Neil has generously written a description of his process, reprinted here, and his web site has numerous photos showing works in progress.
